As said earlier the key to any successful lifestyle is preparation and variety... well where to begin some may think. It's actually rather simple, we can start with this- next time you walk into the supermarket take note of where the "yes" foods are and where the "off-limits" foods are located. It won't take but just a minute to realize that generally speaking the inner portion of any supermarket holds the "bad" foods, and the outer rim is where you will find the "good" stuff.
Below are just a few examples of Paleo Staples that are good to keep on hand... the possibilities are endless
Honey (A great sweetener, but don't go crazy with it as it does have a high sugar content)
Salmon (wild- caught if possible) Salmon is a great source of protein and omega-3 fat
Spinach (Great for salads, smoothies, omelets or just sautéing with garlic and olive oil
Avocado (Great source of fat and oh so tasty) Great for salads, smoothies, and as a topper on lean meats
Almonds (Great source of fat) Excellent on the go snack
Eggs (Organic if possible) we prefer free-range as well, and if possible directly from a farm is always the most tasty
Coconut (Coconut Milk is a great substitute for dairy- where recipes call for it, works well in smoothies, or just by itself) (Coconut Oil is also a great tool for cooking purposes, we especially love the way coconut oil sautes salmon patties, crab cakes and scallops/shrimp- the flavor is excellent)
Almond Butter (great alternative to peanut butter) I have been blending this in smoothies for that extra kick to jump start my morning wod's
Olives (Great for salads, or snacks- be sure the only ingredients are water, olives and salt)
Wild Caught Scallops paired with sautéed spinach, broccoli and zucchini cooked in Coconut Oil
(Our New Year's Eve dinner- whipped up in around twenty minutes)

Rocket Fuel: Everyday Paleo Cookbook
1 cup chopped pecans
1/2 cup chopped walnuts
1/2 cup chopped almonds
5 dates finely chopped
2 egg whites
1 TBS cinnamon
Coconut oil
Preheat oven to 350F
*In a large mixing bowl, add the nuts and finely chopped dates
*In a seperate bowl, drop in the egg whites, add the cinnamon, and beat with a fork until the cinamon is blended with the egg whites. I also added some sea salt.
*Pour egg whites over the nuts and dates and mix until everything sticks together.
*Using your hands, create golf size balls of the mixture and palce onto a baking sheet greased with coconut oil.
*Bake for 15 minutes.
* You could also add coconut to the mixture if desired. Please note that the nut mixture is hard to get to hold their shape. As long as you get a clump of nut mixture onto the baking sheet- you are good to go.
