Salmon Patties (Caveman Style)

Paleo Salmon Patties (Great for on the go lifestyles) 

It's just the first week in for our Paleo Challenge and maybe you are running out of quick and simple meals...

I personally find that Salmon Patties are a great option for lunch or dinner with minimal effort (Trust me this one is simple). They take very few low budget ingredients and even less time to make. I will warn you though, there WILL be a mess to be made when cooking these guys up which I'm not too fond of but oh well. 

Ingredients:
Canned Salmon (or fresh if you would prefer)(Costco is a great option for canned salmon)
Green Onion (sliced thinly)
Green/Red Peppers (I like to use both)
Zucchini (not a necessity but why not add some more veggies, I prefer them to be cubed very small)
Egg(s) (free range organic if possible)
Mayo (homemade preferably) 
Almond Meal (in place of breadcrumbs)
Coconut Oil (gives the patties a great coconut flavor)



Start by cutting the onion, peppers and zucchini (I find the smaller the better) and place those to the side. On a large plate pour out your almond meal and place that to the side as well.



Next, drain the salmon and add to a large mixing bowl. In that same bowl add your veggies, onion, eggs and mayo. (The ratios will depend on how many patties you are making) Generally we use three cans of salmon paired with one egg, a few stems of sliced green onion, one large zucchini and one small red/green pepper. The mayo ratio we always eye-ball, too much is never good but too little can dry them out as well. 



Next it's time to get your hands dirty, take the salmon and make medium sized balls with them. Roll your salmon balls over the almond meal filled plate and press down firmly enough to create a patty but not so much to tear them apart.

Next place them in a coconut oil covered skillet on medium to medium high heat. Cook until they have a nice golden brown color and are no longer cold in the inside to touch. 



Enjoy!  (Freezing them is always a great option)

Freeze the uncooked prepared patty. When ready to eat cook from frozen the same way ( may take a little longer and use lower heat!)
